Children have always really liked cookies, Me too when I was young, i really liked butter cookie, it has an amazing taste, crisp, and the smell of butter was wonderful. I remember , during the Vietnam New Year our home had a lot of different kinds of cookies : coconut, peanut butter and butter cookies. Whenever my mum bough or made cookies i would always be the first in the kitchen to taste and enjoy them. I would also hide away extra cookies in my room under my pillows to have a midnight snack before bedtime. Problem was in the morning when mum woke us up she would notice ants running around our heads. Waking us up she would check under the pillows to find cookie crumbs from my midnight snack, Mum would scold me for being naughty. The story made the rounds of my family and close friends and would always bring a smile and a laugh whenever anyone spoke of the tale. It did make me shy at first but was happy that my silliness could bring some happiness to those i love… 

Cookies incorporate the textures & flavors that we love best: crispiness, chewiness , with chocolate, caramel and vanilla. and sometimes creamy goodness in the middle. All these different components that are so adored, all wrapped up in a little package that fits in your hand.

 

whats most important in making cookies is to master the basic techniques involved for each of them. For the chocolate chip cookie the consistency of the butter before you add the sugar is important, as is how much to mix the eggs when u add them then how long to mix the flour. It is a lesson in mixing, cookies are something that you can play around with, they allow you freedom & creativity. Once you understand the basic techniques, you will be limited only by your imagination.

Butter cookies.

Ingredient: bake 170 degree bake 10-12 minute 240 gr powder sugar 430 gr unsalted butter 2 eggs 480 gr all purpose flour
2 gr salt.2 ml vanilla extra.

In a large bowl, cream together the butter and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour and salt; stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill cookie sheets. Preheat oven to 170 degrees C. Press dough out onto ungreased, chilled cookie sheets. Bake for 8 to 10 minutes in the preheated oven, or until lightly golden at the edges. Remove from cookie sheets to cool on wire racks.
